Passion Fruit Chutney

What to do with lot’s of passion fruits? The first things that came into my mind were the cheesecake or pannacota, but finally I decided to try something different, a chutney.

  • 2 tablespoons of olive oil
  • 1/2 onion
  • 2 small garlic cloves
  • 1 small chilli
  • 8 passion fruits
  • juice of 1/2 lemon
  • 1 tablespoon of chopped coriander leaves
  • 1 teaspoon of brown sugar
  • Salt
  • Black Pepper

In a small saucepan slowly sauté the half a onion, garlic and chilli all finelly cut with a bit of olive oil. Juice the passion fruits and remove the seeds with the help of a mesh colander. Add the passion fruit and lemon juices to the sautee, the brown sugar and season with salt and black pepper. In slow fire let the sauce cook until it achieves a more thick consistency. Add the cilantro leaves only in the end, do not let them cook too much.

Believe me when I say that this chutney recipe will make grilled meats shine. It is a very tropical and summery sauce that will highlight your spring/summer barbecues.
